   Pugliese Cooking
Apples, onions and red wine contain an important substance in the fight against serious illnesses. Our humble Pugliese cooking is the secret in the prevention of cancerous tumours.
   Full Article
Grandma’s cooking, made with simple foods, rich in fruit and vegetables cultivated from our own gardens, is the most hailed way in the prevention against illness, promoting a healthy lifestyle, but also by adding perhaps, to this Mediterranean lunch, a touch of English with a cup of tea.

In fact, it has recently been revealed that apples, onions, red wine and tea contain a small molecule of active anti-oxidant, quercetin, which according to a research laboratory in Avellino, a national advisory and research centre, ( Istituto di scienze dell’alimentazione (Isa) (Institute for Nutritional Studies)) can be used as a therapy in the treatment of leukaemia.

This molecule has a natural capacity, present in a number of important foods in our diet, or can be included daily as a synthetic blocking agent, (25-30 milligrams per day), has potentially active chemoprevention, to transform tumour cells, reversing their action.

“Many active chemoprevention substances are present in vegetable foodstuff, like fruit and vegetables, drinks such as tea or red wine”, remarks Gian Luigi Russo, Researcher for ISA-Cnr. “This substance acts as an anti-oxidant, counteracting the dietary effects of free radical cells in the organism and modifies the activity of numerous enzymes responsible for the detoxification of cancerous substances taken externally (atmosphere, through foods etc)”

Through the course of evolution, the living organism has developed a system of liberating damaging cells, those pre-cancerous cells that initiate tumour formation, and which are programmed to self destruct, “cell suicide”, commonly known as apoptosis.

In other words, the organism acts to free its own cells from irreversible damage, survival advantage for the organ or the individual.

Therefore, a diet rich in apples, onions, washed down with a good red wine, followed by a good cup of tea in the afternoon, represents a valid contribution to our diet, that awards our organism a preventative measure in the fight against serious illness.

The Mediterranean diet that we have now, said to be humble and poor, with legumes, pasta, tomatoes, vegetables, and various vegetable fibres, are in fact of considerable benefit to our health.
